Keeping it simple with food

One of the greatest lessons I’ve learned in this past year is to keep it simple with food!

I used to go nuts in the kitchen, prepping extravagant meals from my cookbooks, not to mention, spending hundreds of dollars on the ingredients each week.

Contrary to popular belief, not every health coach loves to cook. Cooking is NOT my zone of genius….meaning it’s just not what I enjoy spending time doing. I’d much rather be connecting with people or taking a nice walk in the neighborhood to wind down.

But I cook because it’s how I take care of myself and stay healthy, so it’s worth it!

I have learned to prepare food and eat it in a way that both supports me and is sustainable.

I do that by keeping it REALLY simple!

What I mean by that is…

*I eat the same salad for lunch every single day. It’s delicious, I get my veggies in, and it’s nice and light and doesn’t put me in a mid-day food coma.

*I cook the same 6 meals for dinner every week. I have the recipes down, I love the meals, and I know they fuel my body!

What I love about keeping it simple with my food is that none of my meals take me over 10 minutes to prepare (and under 30 to cook). And I don’t have to spend time or energy thinking about what I’m going to cook. Grocery visits take under 15 minutes for the week. And I’m eating the foods that fuel me and make me feel my best.

Could you benefit from keeping your meals simple? If so, I recommend starting out by finding your staples. Think about the foods you like to eat for dinner and Google “simple recipe for X.” If the recipe is made up of easy ingredients that you already keep around your kitchen, give it a try. Keep trying new things until you’ve got your top 6 simple, healthy meals!

So while this way of eating isn’t for everyone, I wanted to throw it out there as an idea for those of you who believe eating healthy has to be hard or time-consuming. It doesn’t have to be!
